How Long to Boil Eggplant
Boiling eggplant takes less than a half-hour, depending on how thick the pieces are. If you've diced up your eggplant or cut it into circular pieces, it will take 10 to 12 minutes to boil, but if you're boiling a whole eggplant at once, it will take closer to 20 minutes. This cooking method is great if you want to cook eggplant without adding fat. The result should be eggplant that gives easily when you poke it with a knife. Once it's done, you can add the eggplant to another dish, blend it to make baba ghanoush, or just eat it as is.
