What's the Right Internal Temperature for Roast Pork?

The safe internal temp for roast pork when it's done is 145 degrees Fahrenheit. If you cook your meat to this temperature, then remove it from the heat source and let it rest at least 3 minutes before serving it, you'll have medium-rare meat that's flavorful and safe to eat.
